Quick and Tasty Lunch Idea
If you are, like me, trying to reduce starchy carbohydrates in your diet, lunches can be challenging. Here's a quick recipe you can throw together that will boost your veg intake, and provide fats and protein to keep you going through the afternoon. Swap in any veg you have lurking in your fridge to use up leftovers.
Ingredients for 2 generous servings:
1 tbs olive oil
1 red onion chopped
1 orange pepper chopped
1 courgette chopped
1 garlic clove crushed
50g frozen peas
50g frozen sweetcorn
25g frozen soy (edamame) beans
1 pack halloumi (I like the one with chilli in)
Harrisa paste (amount to taste)
Heat half a tbs olive oil in a frying pan. Add the onion, pepper, courgette and garlic and gently fry over a low-medium heat until the veg starts to soften (5-8 minutes).
Add the frozen veg to the pan and continue to cook for a further 3-4 minutes. When the veg is as soft as you like it, add the harissa paste. I like it hot so add 2-3 tsp.
Whilst the veg is cooking, slice the halloumi into 0.5cm slices. Heat the remaining oil in another pan and fry the cheese over a medium heat until it is nicely browned on both sides.
Save leftovers to have the next day.
